Chicken & Dumplings

4 lbs. chicken breasts
2 carrots, peeled and thinly sliced
2 celery stalks, thinly sliced
1 onion, chopped
1/2 t. dried rosemary
1-1/2 t. dried thyme
2 t. salt
1/2 t. pepper

Rinse chicken breasts and place into a large stockpot. Cover with water. Add carrots, celery, onion, rosemary, thyme, salt and pepper. Bring to a boil. Reduce to simmer. When chicken is cooked, approximately 30 to 45 minutes, or until juices run clear when chicken is pierced, remove from pot and shred. Return to broth.

Dumplings

2 c. all-purpose flour
3 t. baking powder
1 t. salt
2 T. fresh parsley, minced
4 T. shortening
3/4 to 1 c. milk

Combine flour, baking powder, salt and parsley in a bowl. Cut in shortening until mixture resembles coarse meal. Add milk and stir briefly with a fork. If necessary, add additional milk to make dough hold together. Drop mixture by spoonfuls on top of boiling chicken mixture. Cover and steam for 20 minutes without lifting the lid. Don't even peek!]


Marvelous Meatloaf

3/4 c. bread crumbs
3/4 c. milk
1-1/2 lbs. ground beef
1 onion, chopped
1 T. salt
1 T. pepper
1 T. Worcestershire sauce
1/2 c. catsup
2 T. mustard
2 T. brown sugar, packed

Combine bread crumbs and milk in a large mixing bowl; add the next 5 ingredients, mixing well. Place into an ungreased 9"x5" loaf pan; set aside. Stir catsup, mustard and sugar together; spoon over meatloaf. Bake at 375 degrees for one hour. Makes 8 servings.


Old-Settler Beans

1/2 lb. ground beef
1/2 lb. bacon, chopped
1 onion, chopped
1/2 lb. ham, cubed
1/2 c. brown sugar, packed
1/3 c. sugar
1/4 c. barbecue sauce
1/4 c. catsup
1/3 c. molasses
16-oz. can pinto beans
15-1/2 oz. can navy beans
15-1/2 oz. can kidney beans
28-oz. can pork & beans
Brown ground beef with bacon and onion; place into a slow cooker. Add remaining ingredients; stir to mix. Heat on low setting until warmed through, about 4 hours. Serves 8 to 10.
