Amish Sweet Rolls

1 pkg. active dry yeast
1/4 c. warm water
1/4 c. plus 1 T. shortening, divided
1/4 c. sugar
1 c. milk, scalded or 1 c. water
1 t. salt
3-1/4 to 4 c. all-purpose flour
1 egg, beaten

Dissolve yeast in warm water. In a large bowl, combine 1/4 cup shortening and sugar. Pour hot milk or water over mixture. Cool to lukewarm. Blend salt into flour. Add one cup of flour to sugar mixture and beat well. Beat in yeast mixture and egg. Gradually add remaining flour to form soft dough, beating well. Brush top of dough with remaining softened shortening. Cover and let rise in warm place until doubled, about one to 2 hours. Punch down and knead. Form rolls. Let rise again until doubled. Divide dough in half. Roll each half into a rectangle approximately 12"x8".

Filling-
1/4 c. butter
1/2 c. brown sugar
1 t. cinnamon

Spread each section of dough with butter. Combine brown sugar and cinnamon and sprinkle over butter. Roll dough from long side. Cut into 1-1/2 inch slices. Place rolls in greased pans about 3/4 inches apart. Let rise and bake at 350 degrees for 30 minutes. Cool to warm. Frost with your favorite powdered sugar recipe if desired.

Makes 2 dozen rolls.

Blueberry Bread

1 c. sugar
3 c. plus 2 t. all-purpose flour, divided
1 t. salt
4 t. baking powder 1 egg, beaten
1 c. milk
2 T. butter, melted
1-1/2 T. lemon juice
1 c. blueberries

Sift together sugar, 3 cups flour, salt and baking powder in a bowl. Stir in egg, milk and butter; add lemon juice. Toss blueberries with remaining flour; fold into mixture. Spread batter in a greased 9"x5" loaf pan; bake at 350 degrees for one hour. Serves 6 to 8.

Pork & Sauerkraut Supper

6 pork ribs
2 T. oil
1 onion, diced
1 c. apple juice, divided
2 lbs. sauerkraut, drained
2 apples, diced
2 t. brown sugar, packed
salt and pepper to taste

Brown pork in oil. Remove from pan. Cook onion in drippings until tender. Stir in 1/4 cup apple juice. In large covered roaster, combine onion, drippings, sauerkraut, apples, sugar and remaining apple juice. Tuck pork into kraut and sprinkle with salt and pepper. Cover and bake at 350 degrees for 2 hours, basting occasionally.]
